Ingredients
  

  • 2 cups cooked chicken breast shredded or diced – rotisserie chicken works great
  • ½ cup mayonnaise Aldi’s Burman’s Mayo or Friendly Farms Greek Yogurt for a lighter version
  • 1 stalk celery finely chopped
  • ¼ cup red onion finely chopped
  • 1 tablespoon Dijon mustard optional, for extra flavor
  • 1 tablespoon sweet relish or chopped pickles
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
  • Fresh parsley optional, for garnish

Method
 

  1. Cook and shred/dice chicken breast, or use pre-cooked chicken from Aldi for convenience.
  2. In a large bowl, combine mayonnaise, mustard, relish, lemon juice, salt, and pepper. Stir well.
  3. Stir in chopped celery and red onion until evenly mixed.
  4. Add shredded chicken to the bowl and fold everything together until fully coated.
  5. Cover and refrigerate for at least 30 minutes to let flavors blend.
  6. Enjoy on toasted bread, in a wrap, with crackers, or over a fresh Aldi salad mix.
