Ingredients
  

  • 1 large or 2 medium slices of bread 2.2 ounces
  • 3/4 cup shredded chicken 3 ounces
  • 1/4 cup diced red bell pepper 35 grams
  • 2 tablespoons diced red onion 15 grams
  • 1 tablespoon chipotle mayo
  • 1/2 tablespoon lime juice
  • 1 teaspoon honey
  • 1-2 thinly-sliced slices of pepper jack cheese 1 ounce
  • salt and pepper to taste
  • for topping – cilantro parsley, green onions, hot sauce…

Method
 

  1. Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  2. Toast bread. Lightly toast bread in the toaster. This will help ensure the bread doesn't get soggy.
  3. Make chicken salad. Add shredded chicken, peppers, onion, mayonnaise, lime juice, honey, and a pinch of salt and pepper to a medium bowl and stir well to combine. Adjust according to taste.
  4. Make sandwich. Spread the chicken mixture over toasted bread. Top with sliced cheese.
  5. Bake. in the oven for 6-8 minutes until the cheese is melted. You can place it under the broiler for 1 minute if desired.
  6. Enjoy! Sprinkle with fresh chopped cilantro and enjoy immediately. Serve with sides of your choice.
